Then I stopped making risotto for a long time and after a year eating Jonathan's risotto which is mind blowing, studying cookbooks, reading recipes and watching as many as video recipe as I could, I finally come out with a very tasty and perfect risotto! After another year I finally have the confidence to share it with you all. One of the few things I love about winter is that I can eat more hot soups! I love soups. I enjoy mixing all kind of different vegetables, herbs and spices together coming up with a tasty, creamy hot dish which is not very heavy and I can mix with lovely goat cheese, crème fraîche, yogurt, lime, lemon or more... Rich soups like Ash-s and minestrone are a big part of Iranian culture, we have lots of different Ash-s made with herbs, legumes and spices and usually as we do not have lots of choice of cheese, we use Kashkor fat yogurt to eat the Ash with. In this recipe I used marjoram and chickpeas which are very common in Iranian cooking as well as tomato sauce and lime. I added a goat cheese which some types of it can be very similar to Kashk. I usually buy fresh local ingredients and I prefer to don't buy anything that is not in season or local, but his time for the Whakiti event which everything was about Haiti I decide to prepare a food using a south american ingredient to present the taste and flavor of that part of the world. So searching different ingredients and dishes I found "Cassava" root very common, famous and very interesting to cook with.

"Nanna" in farsi means Mint and "Dagh" means Hot! so this "Hot-mint" recipe is going to be super easy and super delicious. You can find it a bit strange but I must say when is mixed with some soups and ashs with herb and cheese, cream based., you are going to fall in love with this simple Iranian condiment.

Every autumn when the rain & cold weather of Europe begins, I know that it is going to last at least for 7 to 8 months! Winter in Iran is only 3 months, 3 very very cold months, but at the exact third month the winter will leave room for the Spring! So no cold, no wind, no snow!
