Yes, that's my 31's Birthday Cake. I baked a Sponge Cake inspired by Jamie Oliver's super simple sponge cake . Then for more an Iranian touch, I added some cardamom & lemon zest in the batter.
Then for the filling I whipped 200 g mascarpone with 2 tablespoon icing sugar, some lemon zest and a full teaspoon of Iranian creamy pistachio Halva Ardeh, for the top instead I whipped some normal cream and I decorated with some Iranian Pistachios which I brought from Iran last month.
. Serve with hot coffee or tea.
